ANDES MINT COOKIES

Ingredients:

1 cup unsalted butter, softened
1 cup granulated sugar
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup Andes Mint baking chips
1/2 cup semi-sweet chocolate chips
Instructions:

1. Preparing the Dough:

In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract, until well combined.
In a separate bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
Fold in the Andes Mint baking chips and semi-sweet chocolate chips until evenly distributed throughout the dough.
