Mix Wet Ingredients:
In a large mixing bowl, beat the softened cream cheese until smooth. Then, add the melted butter, sugar, milk, and beaten eggs. Mix well until smooth and combined.
Add Corn and Muffin Mix:
Stir in the drained whole kernel corn and creamed corn. Add the corn muffin mix and stir until just combined. Avoid overmixing to keep the texture light.
Season and Add Cheese (optional):
Add the salt and black pepper. If using, fold in the shredded cheddar cheese for an extra cheesy layer.
Bake:
Pour the mixture into the prepared baking dish and spread evenly. Bake for 45-50 minutes, or until the top is golden brown and the center is set. Keep an eye on it toward the end of the baking time.
