No-Bake Orange Creamsicle Cheesecake

Step 1: Prepare the crust
1. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated and the mixture resembles wet sand.
2. Press the mixture firmly into the bottom of a 9-inch (23cm) springform pan to form an even crust. Refrigerate while preparing the filling.
Step 2: Dissolve the gelatin
1. In a small bowl, dissolve the orange-flavored gelatin in 1/4 cup (60ml) of hot water. Stir well until completely dissolved. Let it cool slightly, but do not allow it to set.
Step 3: Make the cheesecake filling
1. In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
2. Gradually add the powdered sugar, orange juice, orange zest, and vanilla extract. Beat until well combined.
3. Slowly pour in the dissolved gelatin mixture while continuing to beat until fully incorporated.
4. In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
Step 4: Assemble the cheesecake
1. Pour the cheesecake filling over the prepared crust, spreading it evenly with a spatula.
2. Cover the pan with plastic wrap and refrigerate for at least 4-6 hours, or until the cheesecake is firm.
Step 5: Garnish and serve
1. Once set, carefully remove the sides of the springform pan.
2. Garnish with whipped cream, orange slices, or extra zest as desired.
3. Slice and serve chilled.
